Autumnal Wine Dinner
“Nature writes our menus, and we should listen” says Fergus. And nature puts on a truly lavish spread in Autumn, with the first freshness in the air inviting the heartier fare of game and root vegetables, while the mists and mellow fruitfulness herald aromatic pears, quinces and nuts from the trees.
This dinner is a celebration of the season, an exaltation of nature’s bounty from the earth, sea and sky! Served family-style on long tables, as all the best family festivities should be, each delicious course will be paired with a complimenting wine. The rich and classic Macon Villages with those silvery sprats and nose-tingling horseradish, followed by a comparison of two wines as you enjoy the deep-hued Pigeon and Beetroot: the favourite Bourgone Rouge next to the just-released Cinsault, fascinating side-by-side!
Then magnums of claret in true celebratory style and a generosity which befits the season, with one of our most beloved dishes: the Ox Tongue, Lentils and Green Sauce. And finally, to finish, a glorious seasonal Pavlova and a nip of brandy for internal warmth as you step out into the first Autumnal chill.
St. JOHN co-founders Trevor Gulliver and Fergus Henderson will be your hosts for the night, as Trevor tells you a little about what’s in your glass and Fergus, along with Bridge head chef Valter Bianci, puts the delights on your plate. Starting with Fergus’ favourite aperitif Lillet and ending with that warming tipple, with fantastic wines and company in between, raise your glasses with old friends and those new friends at your table. This will be an evening to remember.
