About the Bridge Theatre

The Bridge is London Theatre Company’s first new theatre, and the first wholly new commercial theatre of scale to be built in London for 80 years. It has a stunning riverside location on the south bank of the Thames, right by Tower Bridge and five minutes’ walk from the transport hub of London Bridge station. It is designed by Haworth Tompkins, winners of the 2014 RIBA Stirling Prize for Liverpool’s Everyman Theatre. It has 900+ seats and can be configured in end-stage, thrust and promenade formats. The Bridge opened for the first time in October 2017, and since then has produced a variety of plays, including A German Life, a one-woman show with Maggie Smith, and A Midsummer Night’s Dream, an immersive re-imagining of Shakespeare’s classic. My Name is Lucy Barton, performed by Laura Linney, will open on Broadway in January 2020.

About the role

We are looking for a Food & Beverage Manager to join our Front of House team at The Bridge Theatre. As Food & Beverage Manager, you will act as duty manager for the food and beverage team and lead our large bar team during performances, ensuring the highest quality of customer service and adhering to all licensing and health and safety policies. You will also be key to the day to day operations of the venue as well as working with the house management team to ensure consistency and future planning for the department. We are looking for someone dynamic with managerial experience who has a passion for delivering the highest levels of customer service. You must be able to demonstrate strong communication skills alongside attention to detail and a track record of strong and consistent performance. Open seven days with 8 to 9 performances a week (matinee days on typically on Wednesdays and Saturdays), the Bridge Theatre bar is run in collaboration with St. JOHN restaurant, with a select menu of iconic small plates and sandwiches designed specifically for the theatregoer and a bar list curated by St. JOHN and featuring their wines. We aim to offer an exceptional level of customer service across all aspects of the audience experience and the bar and food is a crucial element of this.

Manages: Kitchen Manager, Bar Supervisors and a large team of Bar Hosts

Duties and Responsibilities

  • To act as the face of the bar and food operations for the Bridge Theatre, ensuring an exceptional level of customer service adaptable to the demands of the operation whether in daytime use or around and during performance times
  • Oversee the recruitment, induction and training of bar staff – ensuring all staff are knowledgeable and conversant in the product and menu offering
  • Work with House Manager and Business Development Executive to ensure procedures are followed on reporting, stock take and inventory management
  • Helping to create and implement health and safety procedures as well as relevant training for all Front of House staff
  • Creating and implementing Food & Beverage procedure in areas such as stock take, daily/weekly/monthly/quarterly/yearly cleaning schedules, steps of service and systems of ordering
  • Overseeing customer experience in the venue as a whole, working closely with the House Manager and other Deputies to ensure consistency and continuous training
  • Developing and training a team of Supervisors to ensure consistency and development is offered throughout and assisting with the conception and delivery of training to the bar host team
  • Overseeing staff availability and building work rotas with the other deputies
  • Being responsible for line-managing the Bar Hosts
  • Lead Bar Hosts and Supervisors in delivering outstanding customer service
  • Work with the House Manager to ensure the entire food and beverage operations comply with all health and safety and licensing policies
  • Ensure that Bar Supervisors and Bar Hosts are well tasked when within the building, so as to maximise their experience within the venue
  • Supervise and motivate Bar Hosts, ensuring they are helpful and knowledgeable when assisting patrons
  • Take a lead role in managing and recording of incidents and emergencies while on duty
  • Accurately record bar staff attendance


  • Work with Business Development Executive to provide catering for press events, one-off
    events and corporate hires
  • Develop menus for event catering with St John Head Chef


  • Grow daytime use and help devise effective marketing tactics for developing trade outside of core
    performance hours
  • Execute weekly finance reports to the Business Development Executive
  • Work with House Manager, Business Development Executive and St JOHN on sales analysis and identifying opportunities and strategies for driving revenue growth and controlling costs, wastage and expenditure

Essential skills

  • Strong communication skills alongside attention to detail and a track record of strong food and beverage management experience
  • Commitment to high levels of customer service
  • A ‘can do’ attitude towards situations, leading by example
  • A calm and polite manner
  • Experience with reporting, payroll and HR policies.
  • Previous management experience as a Restaurant Manager or Assistant Manager in a high end, casual dining environment
  • Passion for delivering great food and customer experience, who inspires others with their energy and desire to go above and beyond our customer’s expectations
  • A good knowledge and understanding of and working with budgets, managing wastage and driving revenue
  • Strong people management ability in a fast paced, high volume site
  • An open, engaging and friendly personality who has the confidence to be the host of The Bridge Theatre
  • Good experience of training and successfully developing a team
  • Attention to detail, calm under pressure and resilient
  • Superb team working experience, with the ability to motivate and inspire others
  • Happy to work late hours and take part and support in all theatre events
  • Able to work as part of the London Theatre Company team and on their own initiative
  • Proven ability in cash handling
  • Experience using Microsoft Office and Google Drive


  • A personal licence to sell alcohol
  • Minimum NVQ Level 2 in Food Hygiene and Health & Safety at Work
  • Experience of using online payroll and stock management systems
